"Oh berry happy in my heart....

That’s exactly what popped in my mind yesterday when Sim asked me the name of the dessert I was making. Well..the song is quite nutty and I sincerely hope it doesn’t get stuck in your head like it has in mine since yesterday.

On to better things..the dessert.

A nice light summery pretty dessert which I would make a few changes to next time. Not perfect but has potential. Definitely pretty to look at. Whaddaya think?

Here is the original recipe.

Following is my version.
Sauce:

Blend together a pint or so of strawberries with about 1/4 cup of apple juice or any other juice you have. The sauce should be smooth so blend for about a minute. Taste the sauce, if it's sour, add a little sugar and blend again.

Fruit mix:
Clean, trim and chop some strawberries in to quarters. Add raspberries and blueberries. Add 1 tablespoon of sugar and let it sit for ten minutes.

Cheese mixture:
In a bowl mix together the following:
  • 1/2 cup of mascarporne or cream cheese (I used ricotta but was far too grainy, will use mascaporne next time)
  • 1/4 cup of maple syrup or brown sugar (just enough to sweeten lightly)
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon ginger powder
  • 1 tablespoon orange marmalade or lemon rind
To assemble:
  • Place about 2-3 tablespoons of the strawberry sauce in transparent bowls or glasses. Add about 1/4 cup of the mixed berries. Add a dollop of the cheese mixture. Add on a sprig of mint if desired.
  • Just chill.
The dessert I mean, not you. But you could too. At least the dessert's done.

All the people in India who send me emails about how you don't get the ingredients there...
I know u don't get all the berries there, but you do get the yummiest mangoes! A mix of the mangoes and strawberries would be delicious!
As for the the cheese, if you can get cream cheese use that or else it would be just as yum with some whipped cream (beat with brown sugar, ginger powder and vanilla).
Honestly, the dessert will be as good as the produce. So if you ever have the most decadent fruit at hand, this dessert will rule.
And yes....then you will be berry happy in your heart...!!

Dang it. How about peaches n Mangoes then?
