Eggless Brownies (AB's Cocoa Brownies)


There's a reason I've never made brownies before.
I just love them too much.
But there's a first time for everything and I finally broke down yesterday and made some.
Result?
I ate them for lunch.
No, not dessert after lunch but FOR lunch.
Sigh. So much for moderation and all that self control nonsense I keep dishing out to whoever will listen.
Ever heard this one?
"Everything in moderation. Including moderation."
Yeah well, for me brownies go in the including part.

The recipe I used is Alton Browns except for one big substitute, I used flax seeds as an egg replacer.
Madhuram's event was the motivator for this one. For all the eggless baking I do, I'd never tried flax seeds as a substitute until last night.
Verdict- Pretty good.
The brownies came out very fudgey. It's not the perfect brownie but yummy nonetheless.
I think the flax seeds worked fairly well but it didn't make them chewy enough. The flavor is really good thanks to the dark cocoa powder but the texture could be better.

The method is 1 teaspoon of flax seeds blended with 1/4 cup of water till creamy and frothy. Use this as substitute for 1 egg.

Here is the link to his recipe on food network and also do watch his video before you make this. According to the reviews for this recipe, it's important to follow his method and not just dump everything in the bowl.

Ingredients
  • Soft butter, for greasing the pan
  • Flour, for dusting the buttered pan
  • 4 large eggs ( 4 teaspoons of flaxseed powder blended with 1 cup water as a substitute)
  • 1 cup sugar, sifted
  • 1 cup brown sugar, sifted
  • 8 ounces melted butter (I used 6 oz.)
  • 11/4 cups cocoa, sifted (I used 1 cup Hershey's dark cocoa powder)
  • 2 teaspoons vanilla extract
  • 1/2 cup flour, sifted
  • 1/2 teaspoon kosher salt
Directions

Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.

Sieve the flour, cocoa powder and sugar.

In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. ( I blended the flax seeds with water). Pour the flax mixture in a large bowl. Add both sugars and beat. Add flour and cocoa powder and beat at a low speed till just mixed in. Add the melted butter in a thin stream while beating the mixture.

Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes (It took me more than an hour). Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

eggless brownies does seem interesting! U get those hardly anywhere...the color is mindblowingly dark.

Hey ... that is such a help .. the egg substitute .. with the measurements. I have never ventured into eggless baking becoz of all the complexities. Think I can try this.
Such delicious looking brownies have to be eaten .. so forget the guilt. :-)

I'm also an AB fan, Bharti. Love his Good Eats show. I think that's the only show worth watching in Food TV. Very informative too.

Love the brownies. I'm a brownie addict too, so for me chewy, not chewy, fudgy, not fudgy is not a problem at all. Baking brownies in a brownie pan does take a lot of time to bake, cool. But baking it in muffin pans reduces the time by 50%. My brownie cupcakes were done at 23 minutes itself.
