It's all about the marketing.
Try and sell this to the kids- Pasta in Beetroot Lemon sauce.
And watch them run.
Now tell them "OMG, guess what? We're having PINK PASTA for dinner!"
"oohs, aahs, how is the pasta pink?Mom, how did you make this?!"
I'm telling ya- I almost got the mom of the year award when I made this.
Sim took it to school the next day and her friends "freaked out" when they saw pink pasta!
The kids were simply thrilled by the vibrant gorgeous color, and they also ate beetroot which they normally shy away from.
The sauce also has roasted garlic and lots of lemon pepper which balances out the flavors nicely, making it sophisticated enough to serve for company and funky enough to appeal to the kiddos.
'Cause as all the moms out there know, kids like to eat colors more than food.
But this one won't make them bounce off the walls.
Pink Lemon Pasta
Ingredients- 1-2 medium heads of garlic roasted
- 1 medium beet roasted
- 1 tablespoon olive oil
- 1/4 cup lemon juice
- Grated rind of 1 lemon
- 2 teaspoons lemon pepper (or substitute with more lemon zest and lots of crushed black pepper)
- 1 cup heavy cream
- salt to taste
- 1/2 pound of your favorite pasta cooked according to package directions
- Shaved Parmesan cheese (optional)
Method
For the beetroot
Wash and clean the beetroot. Wrap in foil, place on a cookie sheet and bake in the oven at 400 F for about an hour. Let it cool. Open the foil, peel and chop in to small pieces.
For the garlic
Chop about 1/4 inch off the top part of the garlic to expose the cloves inside. Drizzle with a little olive oil and sprinkle with salt. Wrap up the aluminum foil around, place on a cookie sheet and bake at 400 F for about 40 minutes.
Add the chopped beetroot and cook for another minute. Add the heavy cream, lemon juice, salt and cook for a few minutes on low heat till the sauce is very pink and fragrant.
Toss the cooked pasta with this sauce and add the crushed lemon pepper. Add extra crushed black pepper to give it a kick.
Top with shaved Parmesan cheese and eat immediately.

Wowie! You do come up with the newest stuff! That looks sooo cute. What a super way to get beet into kiddies ... when even adults run away from it. Way to go Bharti! :-)

thats a really cool idea - gave her beets and rice today - and she was very pleased to eat Pink Rice! and then i saw your post! pasta is next.
btw, i love love love whole roasted garlic, and am definitely gonna have to make this tonight. it tastes great smeared on toast with some pesto too.

good idea!! nice pasta. so far i dont have a problem with feeding my girl veggies she loves most incl. carrot, beet and beans - but its fun to do these devious things - cos the real problem are adults not eating beetroot - so Had recently tried beetroot chocolate cake and it was yummy! no one could tell.

Cool one Bharti! Even I'm tempted to taste this one. Will try it witth my son also. He is the type of person who doesn't eat anything if there is any change in color, texture etc. In the Sneaky book there is a similar pasta dish but with cauliflower/zucchini puree, so there is no change in the color of pasta. I'll try both the tricks. Recently I have succeeded in giving mac and cheese (but made of white bean puree)
Reg. beets, I have not roasted beets earlier. But I'm wondering if there is any difference in taste between roasting and cooking. Usually I cook beets in a pressure cooker with little water just for 1 whistle. It's done within 15 minutes.

Maduram: It pretty much tastes the same as when you pressure cook it. I just like having it in the oven and not worrying about it. Less clean up too.

This one is a winner Bharti! I made it for my son's lunch today and he ate it. As soon as he got home from school I got him all excited and he ate it telling that he liked it. I made few changes, like using part skim ricotta cheese etc. Will post it very soon. I think carrots will also work out in this method. Thanks once again Bharti.

Bharti, Adai is basically made with a medley of lentils and is slightly thicker than the regular dosai. And dosais are made only with rice and urad dal.

Back from short break! Happy New Year to you too Bharti. The beet pasta is working. I had frozen some extra sauce from last time and gave it today and he ate it.
I made this last night and it was fabulous! I made a vegan version. Instead of heavy cream (which I didn't have on hand) I blended approx 4oz tofu with 3/4 cup soy milk, 2 tbs nutritional yeast, and 1 tbs olive oil.
a new favorite!
