The edamame beans are full of protein and contain all the amino acids necessary. This by the way, is a rarity in the vegetarian world where foods (usually proteins and grains) need to be combined to get all necessary the amino acids together.
Sid helped me with this recipe. He usually shies away from green stuff and anything new, but pride of ownership took over once he started to make it. We added our ingredients and blended it at top speed. He kept tasting along (even though he put the onions in there!) and made appropriate suggestions about the salt, yogurt and Frank's hot sauce. In the end, we make our improvisations but the recipe is Alton Brown's. And in his very own words, it's very good eats (especially with barbecue pop chips)!

Edamame Dip
Ingredients - 12 ounces shelled, cooked, and cooled edamame, (Bring water to a boil, add the beans and cook for 10-12 minutes, cool and strain)
- 1/4 cup diced onion
- 1/2 cup tightly packed fresh cilantro or parsley leaves (we used both)
- 1 large garlic clove, sliced
- 1/4 cup freshly squeezed lime or lemon juice
- 1 tablespoon brown miso (didn't have any, we used 2-3 tbsp plain yogurt)
- 1 teaspoon kosher salt
- 1 teaspoon red chili paste (we added this and Franks hot sauce)
- 1/4 teaspoon freshly ground black pepper
- 5 tablespoons olive oil
Directions
Place the edamame, onion, cilantro, garlic, lime juice, miso/yogurt, salt, chili paste and pepper into the bowl of a food processor (we made it in the blender for a smooth texture) and process for 15 seconds. Stop to scrape down the sides of the bowl and process for another 15 to 20 seconds. With the processor running, slowly drizzle in the olive oil. Once all of the oil has been added, stop, scrape down the bowl and then process another 5 to 10 seconds. Taste and adjust seasoning, as desired. Serve with chips or crackers. tore in an airtight container for up to 5 days.
